Pepsin er et fordøjelsesenzym; det udvindes fra pepsinogen under PH 1.5-5.0 og pepsinogenet udskilles af mavecellen.Pepsin kan nedbryde de størknede proteiner til pepton ved virkning af mavesyre, men det kan ikke gå nogen videre til aminosyre. Den bedste effektive tilstand for pepsin er PH 1.6-1.8
